Share a Glass with Kay Chandler, of The White Hart at Fyfield

Since arriving at the White Hart in 2005, Mark and Kay Chandler have brought about dramatic changes to restore this beautiful hostelry to its 15th century former glory. They love what they do. This is evident in every aspect of a visit to the White Hart, from the delicious food to the welcoming service. Everything is done with care, thought and passion. The growing list of awards and accolades is testament to this.

"Mark and I fell in love with the white Hart when we first saw it over 10 years ago and we continue to feel this way. We are passionate about what we do and have always wanted to share our foodie enthusiasm with others. We are proud to be independent and support our community. We love the fact we grow lots of our own produce and prepare everything fresh in our kitchens. We love that we make people happy. Quite simply, we have created the sort of experience that we like when we go out to eat!"

In the first of a new series of interviews with local restaurants for The Oxford Wine Company, Kay answers some of our questions below. 

What is the best thing about running a restaurant in Oxfordshire?

The people and of course working with food and wine! I truly love what I do.

What's the worst?

The unsociable hours.

What is your favourite wine on your list?

My favourite wine on our list is the Apollonio Salice Salentino from Puglia in Italy. It is soft, smooth and velvety with rich seductive flavours - simply stunning!

What is your best-selling beverage?

Either our Chilean Sauvignon Blanc which is light, fresh and fruity or one of our gins. Gin sales have really taken off in the last year and we are now stocking 20, all with different garnishes to compliment the different botanicals.

What's an unmissable food and drink pairing at The White Hart?

Mark makes an amazing starter of salt and pepper squid with Asian salad and a lime and sesame dressing. This is superb with a Gewürztraminer. We have a South African Gewürztraminer by Paul Cluver which is deliciously fresh with zesty lime and lemongrass - the perfect accompaniment.

Who would you invite to your dream dinner party?

David Attenborough.

What would you cook, and which wine would you serve with it?

I would cook a risotto with tiger prawns, lemon and lots of green vegetables from our kitchen garden. I don't have a sweet tooth, so I would make a lemon tart with raspberry sorbet and fresh raspberries for pudding. I would serve a Picpoul de Pinet with the risotto and a lovely chilled Sauternes with the lemon tart.

What's your favourite thing to drink now? What was it ten years ago?

Chablis and Chablis!

What's your guilty pleasure beverage?

I honestly don't have one. I drink water, Lady Grey tea, wine and gin!

If there was one beverage you could remove from the face of the earth, what would it be?


  • The White Hart will be running a six course Summer Tasting Menu on the 23rd August - a celebration of summer flavours using produce from their garden, local farms and suppliers. The cost per person is £48. A matching wine flight will also be available.
  • On the 20th September they will be hosting an Italian night - a feast of delicious Italian food. £40 per person.
