Each separate vineyard parcel was harvested with successive passages through the vineyard; the grapes were fermented separately as well. This with the intention of creating a vast range of lots with the different aromas and personality created by the different vineyard plots and the varying ripeness levels of the crop. Once in the cellars, the grapes were destemmed then lightly crushed and softly pressed. The successive pressings gave different fractions of must, each chilled for 24 hours to favor a natural settling of the impurities. The clean must then went into stainless steel tanks and fermented at temperatures held to a maximum temperature of 61° Fahrenheit (16° centigrade). The various lots were systematically evaluated a month after the fermentation, and those selected for the final blend were assembled for bottling.

A luminous straw yellow in color, the wine is elegant and intense in aroma with floral and citric notes along with the notes of aromatic herbs which characterize the variety. Fresh in flavor, it is fruity and endowed with pleasurable mineral sensations which add savor and length.

There is no oak in the wine, but there is an amazing creamy feel to it, which usually suggests barrel influence - this is vermentino's skill.
