- Stéphane Briday uses no more than 20% new oak with this wine. The charring of the oak is relatively long for a white wine, this is to introduce a particular "sweet" tone to counter sharp and tight flavours often found in Rully due to the shallow stony soils. Briday also uses larger barrels up to 400l so as not to have oak as the dominating flavour instead of the typical minerality found in Rully.
With a good amount of depth and complexity the flavours of this wine work well in harmony.
Prominent white fruit flavours of peach and green apple are met with fresh, waxy lemon peel and minerality. A hint of spice and an oily mouth feel are left on the palate.
