shiner" is the proclaimed "world's most badass wine.; the "working class man of the Paserene family." It may be their more entry level wine, but it's certainly still pretty serious, with all the same love and effort put in to production and high quality fruit that you would expect from Martin.
A badass blend of 80% Cabernet Sauvignon, 13% Merlot, 6% Petit Verdot, 1% Cabernet Franc, matured in oak for 22 months with 20% new oak. The first 120 bottles landed in the UK February 2019, and vanished in to some of London's finest restaurants quicker than you can say wine. Lucky for us, we managed to get our hands on lots more.
Pardon the pun, but it's a knock out. A beautifully judged wine with red and black berries, lilies and scrub on the nose, as well as more brooding notes of earth and liquorice. Lovely fruit purity, fresh acidity and properly ripe tannins, with an intensely savoury long finish. Just the tick box balance between rustic and polish. Round of applause.
Paserene is the passion of winemaker Martin Smith (formerly of Vilafonté and now dedicating his time to Paserene) working jointly with Ndabe Mareda. Now complete with a state of the art tasting room located just outside Franschhoek (well worth a visit, trust us) - Paserene have taken a best of breed approach and work with multiple parcels of land in Elgin, Franschhoek and Tulbagh. The future is certainly looking bright as well for this boutique winery, with the recent purchase of a farm in the shadow of the Witzenberg mountains; the neigbouring farm to where they currently source the fruit for the Union blend. It's rugged, wild and fairly untouched at present, but with great plans for planting vines, and even luxury ecolodges among the fynbos. We're so excited to be part of the Paserene story, and the future it holds.
