'La Guardiense is the largest producer of Falanghina, a crisp, dry white which flourishes on the volcanic soils near where the Campi Flegrei eruption took place millenia ago. High acidity and floral notes make this a fine accompaniment to shellfish dishes, or pasta, with creamy sauces.
