- Domaine Gayda is situated south East of Carcassonne in the Languedoc region of South West France, an area known traditionally for its large area of vineyards producing mainly table wines. However things have changed rapidly over the last 10 years and Domaine Gayda represents one of the new wave producers who are putting fruit quality at the centre of their winemaking philosophy. Gaydas attention to detail in their winemaking allows complex fruit flavours to express themselves fully without being withheld or disguised by green or unripe tannins. All Gayda's viticulture and viniculture is performed organically and biodynamically.
Opaque, perfumed with fragrant black cherry, cassis and spice. Full bodied, intense with countless layers of flavour including blackcurrant, cedar and graphite. Dense fruit on the palate is bound by a structure of fine grained tannins and a lively acidity. This wine shows great depth and character and yet is refined with a long, elegant finish.
- 'The quality of Cabernet Franc that can be achieved in the Languedoc-Roussillon is exemplified in this well-regarded 100% varietal, organic wine in Gayda's Figure Libre (free-style) range. There is a lovely balance between richness and bright acidity, that holds the wine together well and places it somewhere between New and Old World (Right Bank) styles. The nose is black cherry, cassis and pepper; the palate is dense, with ripe blackberry, cedar and fine tannins.' - Peter Dean, The Buyer
'Bright purple, with crunchy blueberry fruit, Iodine and iris. It has a decent structure which carries the fruit rather than dominates; youthful tannins but well integrated. Delicious.' - The Buyer
'One of the new-wave producers playing a key role in shaping the wines of the region. Full-bodied Cabernet Franc offers classic cassis and spice notes, bolstered but not swamped by 20% of new oak and textured, grainy tannins.'

- Food match:
Cabernet Franc makes an excellent match for cured meats and pates, particularly those which, like the wine, have a slightly herbal edge to them.
