- Chamonix Wine Farm is nestled against Mont Rochelle mountain, deep within the rich wine-growing valley of Franschhoek in the Western Cape. Formerly part of historic La Cotte granted to the Huguenots in 1688, Chamonix has around 50 hectares under vineyard. Against the mountain, the farm benefits from cool breezes during hot summer months and stony, clay-rich soil, giving the wines the unique personality and character which make up the Chamonix story. The grapes for the Pinot Noir Reserve were destemmed but not crushed and the must fermented in wooden and concrete vats with spontaneous yeast. Malolactic fermentation occurs naturally and the wine is matured for 16months in French Allier barrels with approximately 60% new oak.
Ruby red in colour and shows notes of cherry, wild red berries, crushed black pepper, cinnamon and violets on the nose. Although firm in structure and intense in flavour, expanding with time to extraordinary opulence and length on the palate.

Great with rare steak or even a beef carpaccio. Alternatively, go with a dish that involves the earthy flavours of mushrooms or truffles. Slightly funkier cheeses are also good!
