The attention to detail is mind boggling here. After meticulous work in the vineyard to ensure even ripening, whole bunches are harvested by hand. These bunches undergo strict selection to ensure they are 'thin' enough (air between the grapes within the bunch) to allow a steady drying process before crushing and fermentation. The juice of the dried grapes gives the wine so much concentration and complexity you'll be reaching for more.
