- Bichot practise sustainable viticulture, based on observation, prevention and paying attention to the complex balances found in nature. The soil is maintained responsibly, it is judiciously ploughed and fertilized using organic matter. They also encourage manual labour that boosts the plants' natural defenses.
Light in body, with berry fruit flavours and a hint of cinnamon which will develop over time into a surer spiciness. Soft, elegant and beautifully structured.

- The finest and most elegant red wines of the Côte de Beaune are grown in the village of Volnay. A village which might be twinned with Chambolle-Musigny in the Côte de Nuits, for the high active chalk content in the soil and comparatively low clay content.

Red Burgundy has that lovely earthy quality that works so well with autumnal flavours. Dishes including game birds, mushrooms, and/or truffles are all good options.
