Founded in 1815, Domaine Billaud-Simon covers nearly 17 hectares of vineyards across both the left and right banks of the River Serein. The Domaine incorporates the Grands Crus of Les Clos, Vaudesir, Les Preuses and Les Blanchots as well as the Premiers Crus of Montee de Tonnerre, Fourchaume, Mont de Milieu and Les Vaillons.
In addition to producing single vineyard wines from these top sites, Domaine Billaud-Simon have created Chablis Tete D'Or as their flagship wine. With grapes sourced from parcels planted right next to Grands Crus and Premiers Crus, they aim to exhibit the best possible expression of a Village level Chablis.
Domaine Billaud-Simon work primarily with old vines of an average age of 50 years. The grapes are tended by local men and women who focus on allowing the grapes to ripen slowly, aiming for a late harvest resulting in rich, aromatic expressions and concentrated flavours.
In the cellar, they believe in protective winemaking, so it is their style to not use oak.
