One of the key grapes of the Valpolicella wines. Basic Valpolicella is light and fruity with better examples coming from the Classico DOC. This variety lends itself to the Appassimento process to then produce the very famous wines, Amarone and Recioto della Valpolicella. The adding of unpressed skins of an Amarone to a basic Valpolicella wine produces what is called a Ripasso wine.
