Chardonnay
Its Burgundian roots soon expanded all over the world. Cool climate sites, produce steely, high acidity wines with aromas of apple and pear. In moderate climate, the wine reveals citrus, melon and peach characters. Low acidity, high alcohol wines with exotic aromas like banana and mango are produced in hot climate sites. Procedures like malolactic fermentation and the use of oak in fermentation or ageing of the wines are winemaking techniques that can contribute to the enrichment of Chardonnay.
