The heat for the slow distillation process comes from vine wood embers. The alcoholic vapors migrate through the copper pipe of the still, and through a cooling device. Then, the alcohol condenses and drips into a vat. The first distillation (8 hours) creates the alcohol, while the second (also 8 hours) removes impurities, the third (24 hours) gives the arak purity and distinction. After the third distillation the spirit is combined with macerated organic aniseed grown on the Syrian slopes of Mount Hermon, considered to be the best in the world.

- Other info: In Lebanon arak has been considered before the industrial revolution as the noble drink and wine the popular one. Indeed, the Lebanese masses could not afford the copper still to distill arak, while wine making did not require heavy investments. The wealthy Lebanese who owned a still produced refined arak for their families and friends according to secretly kept recipes and then the still was lent to their subjects as a sign of generosity.
