Kaiyo whisky is matured in the finest Mizunaraoak casks. Mizunaraoak casks are the most expensive casks in the world and considered the best in which to mature whisky. The Kaiyo'steam's pioneering research into the effect of wood selection on whisky maturation has led to the development of bespoke barrels, crafted from slow growth, air-seasoned wood from hand-selected trees. These casks are handmade due to Mizunaraoaks delicate wood grain. The malted barley is distilled in Japan before being put into the Mizunaraoak casks and gently matured in the traditional style for many years. It then embarks on an unique sea voyage.
Kaiyo means 'Ocean' and the brand is so named after the ocean-ageing the whisky undergoes. Barrels leave Japan and travel for at least 3 months around the world (always eastbound as trials have shown that barrels sent eastbound have a better flavour than those going westbound!) before being bottled in the UK. Kaiyo could call itself 'Japanese Whisky' but mindful of the fact it is bottled outside Japan, the team have decided not to put that on the label in case regulations change in the near future.
The whiskies are traditional in creation and style as Jeffrey Karlovitch, the Master Blender, is a huge fan of Scotch Whisky and who's contribution to the Scotch Whisky industry has been recognised by his position as a "Keeper of the Quaich".

Delicate with a sweetness and hint of tropical fruits like papaya and pineapple on the nose -a common aroma and character of Mizunaraoak. A gentle light finish with some warm spice.
