- Jean-Marc Boillot was born into a family of vignerons in Volnay in 1951. He did not go on from school to study for a formal qualification in wine but instead began to build his experience and expertise from 1967 working with his grandfather Henri, father Jean and brother Henri. A family disagreement in 1984 prompted him to leave the family domaine and until 1988 he served as winemaker for the négociant Olivier Leflaive in Puligny-Montrachet. He describes this as 'très bonne expérience', which allowed him to experiment freely as well as to win a masterly overview of Burgundian Chardonnay throughout the Côte d'Or and beyond.
A perfect balance of fruit flavours from the grape (think apple, lemon peel and a touch of grapefruit) and complexities added by winemaking. The palate is pleasantly smooth and creamy, and a touch of oaky richness adds depth.
