- The harvest is de-stemmed in its entirety and deposited in a cement tank. It is cooled to favour a pre-maceration of a few cold days. After the start of the fermentation, crushing and pumping over alternate to ensure a good fermentation to keep finesse and fruit so particular to the soil. The duration of the vatting is about 14 days. Fermentation takes place at controlled temperature. When the wine is fermented, 60% of the wine is aged in oak barrels (20% of which are new oak), 40% of the most fruity wines are kept in tanks and aged for 16 months. Bottling is done after the barrels and vats are assembled about 18 months after harvest after light filtration.
Verging on a new-world style of Pinot Noir due to the juicy flavours of red cherries and raspberries. Light bodied, low tannin and high acidity make for a perfect easy drinking wine.
